- 1 cup basmati rice
- 2 cups coconut milk
- 1 cup sugar
- 1/2 tsp cardamom powder
- 1/4 cup raisins
- 1/4 cup cashews
- 1/4 cup desiccated coconut
- 2 tbsp ghee
- A pinch of salt

- A large saucepan with a lid
- A spatula

Method
- Wash the rice thoroughly and soak it in water for half an hour.
- Drain the rice and keep it aside.
- Take a large saucepan and heat ghee in it.
- Add cashews and raisins and sauté until cashews are golden brown and raisins are plump.
- Add the drained rice and sauté it for a minute.
- Add coconut milk, sugar, cardamom powder, and a pinch of salt to the rice.
- Stir the mixture and bring it to a boil.
- Reduce the heat to low, cover the saucepan with a lid, and let the rice simmer for around 20 minutes.
- After 20 minutes, switch off the heat and let the rice sit for 5 minutes.
- Open the lid and fluff the rice using a fork.
- Add desiccated coconut and mix well.
- Serve hot or cold.
Notes
- If you don't have desiccated coconut, you can use freshly grated coconut instead.
- You can also add some saffron strands to the rice for a beautiful yellow color and a unique flavor.
- If you want to make the rice less sweet, you can reduce the amount of sugar according to your preference.
