Description

Sweet coconut rice is a popular dessert in Maharashtra, India. It is a delicious and aromatic rice pudding that is made with coconut milk, sugar, and basmati rice. Ingredients

  • 1 cup basmati rice
  • 2 cups coconut milk
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • 1/4 cup raisins
  • 1/4 cup cashews
  • 1/4 cup desiccated coconut
  • 2 tbsp ghee
  • A pinch of salt

Equipment

  • A large saucepan with a lid
  • A spatula
  • A serving dish

Method

  1. Wash the rice thoroughly and soak it in water for half an hour.
  2. Drain the rice and keep it aside.
  3. Take a large saucepan and heat ghee in it.
  4. Add cashews and raisins and sauté until cashews are golden brown and raisins are plump.
  5. Add the drained rice and sauté it for a minute.
  6. Add coconut milk, sugar, cardamom powder, and a pinch of salt to the rice.
  7. Stir the mixture and bring it to a boil.
  8. Reduce the heat to low, cover the saucepan with a lid, and let the rice simmer for around 20 minutes.
  9. After 20 minutes, switch off the heat and let the rice sit for 5 minutes.
  10. Open the lid and fluff the rice using a fork.
  11. Add desiccated coconut and mix well.
  12. Serve hot or cold.

Notes

  • If you don't have desiccated coconut, you can use freshly grated coconut instead.
  • You can also add some saffron strands to the rice for a beautiful yellow color and a unique flavor.
  • If you want to make the rice less sweet, you can reduce the amount of sugar according to your preference.
