For the rice:- 1 cup long-grain rice
- 2 cups water
- 2 cups Chinese egg noodles
- Vegetable oil for frying
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, julienned
- 1 bell pepper, julienned
- 1 cup cabbage, shredded
- 1/2 cup green beans, chopped
- 1/2 cup mushrooms, sliced
- 1/2 cup ketchup
- 2 tablespoons soy sauce
- 2 tablespoons chili sauce
- 1/4 cup coconut milk
- 1 teaspoon sugar
- 1 teaspoon salt

Method
- Wash the rice and cook it in a pot with 2 cups of water. Let it simmer on low heat for around 15-20 minutes until fully cooked.
- While the rice is cooking, heat up vegetable oil in a large skillet for frying the noodles. Once the oil is hot, fry the noodles until crispy and golden brown. Set aside on a paper towel to drain excess oil.
- In the same skillet, sauté the onion and garlic until fragrant. Add in the rest of the vegetables and stir fry until cooked but still slightly crispy.
- In a small mixing bowl, mix together the ketchup, soy sauce, chili sauce, coconut milk, sugar, and salt to make the sauce.
- Once the vegetables are cooked, pour in the sauce and stir until everything is fully coated. Let it simmer on low heat for around 5-10 minutes.
- To serve, place a generous portion of rice in a bowl and top it with the vegetable sauce. Add a handful of fried noodles on top.
