To make the noodles extra crispy, make sure the oil is hot enough before frying them. You can test the temperature by dropping a small piece of noodle into the oil. If it sizzles and starts to brown immediately, the oil is ready. Make sure to drain the excess oil from the noodles before adding them to the dish. You can do this by placing them on a paper towel or a wire rack. When making the sauce, taste it and adjust the seasoning according to your preference. You can add more salt, sugar, or chili sauce if needed. To make the dish vegetarian, you can omit the meat and add more vegetables or tofu instead.
