Ingredients

  • 2 cups cooked rice
  • 1 cup grated carrot

  • 1 tsp cumin seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 tbsp peanuts

  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tbsp lemon juice
  • 2 tbsp oil
  • Salt to taste
  • Few coriander leaves finely chopped

Method

Step 1: Cook Rice

Cook 1 cup of rice with 2 cups of water and keep it aside.

Step 2: Prepare the Vegetables

Grate 1 cup of carrot and chop 1 onion finely. Slit 2 green chilies and keep it aside.

Step 3: Prepare the Spices

In a small bowl, mix 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp coriander powder, and 1 tsp garam masala powder.

Step 4: Temper the Spices

Heat 2 tbsp of oil in a pan. Add 1 tsp mustard seeds, 1 tsp cumin seeds, 1 tsp urad dal, 1 tsp chana dal, and 2 tbsp peanuts. Saute until the peanuts turn golden brown.

Step 5: Add Vegetables

Add the chopped onion and slit green chilies. Saute until the onions turn translucent. Add the grated carrot and saute for 2-3 minutes.

Step 6: Add Spices and Lemon Juice

Add the spice mix and salt to taste. Mix well until the spices are well combined with the vegetables. Add 1 tbsp of lemon juice and mix well.

Step 7: Add Cooked Rice

Add the cooked rice and mix well until the rice is well coated with the spices.

Step 8: Garnish and Serve

Garnish with finely chopped coriander leaves and serve hot with raita or papad.
