Method

  3. After the fermentation process, whisk the batter well to remove any lumps and add a little water if the batter is too thick.
  4. Heat an appam pan or a non-stick pan over medium heat. Pour a ladleful of batter in the center of the pan and swirl it around to spread the batter evenly.
  5. Cover the pan with a lid and let the appam cook for 2-3 minutes or until the edges turn golden brown.
  6. Remove the appam from the pan using a spatula and serve hot with coconut chutney or your favorite side dish.
