Description
Hainanese Chicken Rice is a famous dish from Hainan province, China. This dish is now popular all over Southeast Asia, especially in Singapore and Malaysia. It is a simple yet flavorful dish that consists of poached chicken served with rice cooked in chicken broth and a variety of condiments such as chili sauce, ginger sauce, and soy sauce.

Ingredients
1 whole chicken, about 1.5 kg
2 cups of long-grain rice
4 cups of chicken broth
3 cloves of garlic, crushed
1-inch ginger, sliced
2 stalks of scallions, sliced
2 tablespoons of sesame oil
2 tablespoons of soy sauce
2 tablespoons of oyster sauce
2 tablespoons of vegetable oil
Salt and pepper to taste

A rice cooker
A wok or frying pan

Method
Step 1: Preparing the Chicken
1. Rinse the chicken thoroughly and pat dry with paper towels. 2. Rub the chicken with salt and pepper and place it in a large pot. 3. Add enough water to the pot to cover the chicken. 4. Add the garlic, ginger, and scallions to the pot. 5. Bring the pot to a boil, then lower the heat and simmer for 30 minutes. 6. Turn off the heat and let the chicken sit in the pot for another 30 minutes.
Step 2: Cooking the Rice
1. Wash the rice until the water runs clear. 2. In a rice cooker, add 2 cups of rice and 4 cups of chicken broth. 3. Cook the rice according to the rice cooker's instructions.
Step 3: Preparing the Condiments
1. In a small bowl, mix together the sesame oil, soy sauce, and oyster sauce. 2. In another small bowl, mix together chopped ginger, chopped garlic, and sliced scallions.
Step 4: Assembling the Dish
1. Remove the chicken from the pot and let it cool for a few minutes. 2. Debone the chicken and slice it into serving pieces. 3. Strain the chicken broth and set it aside. 4. In a wok or frying pan, heat up 2 tablespoons of vegetable oil. 5. Add the ginger, garlic, and scallions mixture and stir-fry for 1-2 minutes. 6. Add the cooked rice to the wok or frying pan and stir-fry for another 2-3 minutes. 7. Add 2-3 tablespoons of chicken broth to the rice and stir-fry for another minute. 8. Serve the rice on a platter and arrange the sliced chicken on top. 9. Serve with the sesame oil and soy sauce mixture, chili sauce, and sliced cucumber.
Notes
1. You can use a combination of chicken and pork bones to make the broth for the rice. 2. You can also add pandan leaves or lemongrass to the chicken broth to add more flavor. 3. If you don't have a rice cooker, you can cook the rice on the stovetop using a pot with a tight-fitting lid.
