- 3 cups of long-grain parboiled rice
- 3 large tomatoes, chopped
- 2 large onions, chopped
- 3 red bell peppers
- 4 scotch bonnet peppers
- 2 tablespoons of tomato paste
- 2 tablespoons of vegetable oil
- 2 teaspoons of salt
- 2 teaspoons of curry powder
- 2 teaspoons of thyme
- 2 teaspoons of smoked paprika
- 4 cups of chicken stock

Method
- Blend the tomatoes, onions, red bell peppers, and scotch bonnet peppers until smooth.
- Heat the vegetable oil in a large pot and fry the tomato paste for 2 minutes.
- Add the blended pepper mixture to the pot and fry for 10 minutes.
- Add the salt, curry powder, thyme, and smoked paprika to the pot and fry for an additional 5 minutes.
- Add the parboiled rice to the pot and stir to combine with the pepper mixture.
- Add the chicken stock to the pot and stir well.
- Cover the pot with a lid and cook for 30-35 minutes on low heat, until the rice is cooked through.
- Once cooked, fluff the rice with a fork and serve hot.
