Persian saffron rice, also known as "Tahdig," is a classic Iranian dish that features fluffy rice with a crispy, golden crust. This dish is a staple in Iranian cuisine, and it is often served at special occasions, such as weddings and holidays. Ingredients

  • 2 cups of basmati rice
  • 4 cups of water
  • 1/4 cup of vegetable oil
  • 1/4 tsp of ground saffron
  • 1 tsp of salt

Equipment

  • A small bowl
  • A rice cooker (optional)

Method

  1. Wash the rice several times until the water runs clear. Soak the rice in water for at least 30 minutes.
  2. In a small bowl, dissolve the ground saffron in 1/4 cup of hot water.
  3. Fill a large pot with water and add 1 tsp of salt. Bring the water to a boil.
  4. Drain the rice and add it to the pot of boiling water. Boil the rice for about 6-8 minutes until it is halfway cooked.
  5. Drain the rice and rinse it with cold water to stop the cooking process.
  6. Place the pot back on the stove and add the vegetable oil. Add a layer of rice to the pot, then sprinkle some saffron water on top. Continue layering the rice and saffron water until all the rice is in the pot.
  7. Make several holes in the rice with the end of a wooden spoon to allow steam to escape.
  8. Cover the pot with a lid and cook on low heat for about 45 minutes to 1 hour until the rice is fully cooked and a golden crust has formed on the bottom (Tahdig).
  9. Remove the pot from the heat and let it sit for a few minutes.
  10. To serve, use a spatula to carefully remove the rice from the pot, making sure to keep the Tahdig intact.

Notes

  • Make sure to use a non-stick pot to prevent the rice from sticking to the bottom.
  • If you don't have saffron, you can substitute it with turmeric for a similar color and flavor.
  • Be careful not to burn the rice when cooking on low heat.
