Method
1. In a small bowl, mix together the cajun seasoning, garlic powder, onion powder, paprika, thyme, oregano, salt, and black pepper. 2. Rub the pork chops with the spice mixture, making sure to coat both sides. 3. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and cook for 5-6 minutes per side, or until they are browned and cooked through. Remove the pork chops from the skillet and set aside. 4. In the same skillet, add the chopped onion and minced garlic. Cook for 2-3 minutes, or until the onion is softened. 5. Add the rice to the skillet and stir to coat it in the onion and garlic mixture. Cook for 1-2 minutes, or until the rice is lightly toasted. 6. Pour in the chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid. 7. Cook for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. 8. Return the pork chops to the skillet and spoon some of the rice mixture over the top. Cover the skillet again and cook for an additional 2-3 minutes, or until the pork chops are heated through. 9.
