- 1 cup of cooked rice
- 1 cup of curd

- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper powder

- 1/4 teaspoon of chana dal
- 1/4 teaspoon of asafoetida
- 1 tablespoon of oil

Method
- Wash and cook the rice in a pressure cooker.
- Once the rice is cooked, allow it to cool down.
- In a pan, heat oil and add mustard seeds, cumin seeds, urad dal, and chana dal.
- Once the dal turns golden brown, add grated ginger and asafoetida.
- Add grated carrot and sauté for a minute.
- Switch off the flame and allow the mixture to cool down.
- In a bowl, whisk curd and milk until it becomes smooth.
- Add salt, black pepper powder, and the cooked rice to the curd mixture.
- Mix well and add the sautéed mixture to it.
- Garnish with chopped coriander and mint leaves.
- Curd rice is now ready to serve.
Notes
- You can also add pomegranate seeds or grapes to the curd rice to give it a sweet and tangy taste.
- Make sure the rice is not overcooked, or else the curd rice will become mushy.
- You can adjust the consistency of the curd rice by adding more or less milk.
