- 1/4 tsp urad dal

Method
- Cook the rice and set it aside to cool.
- In a large mixing bowl, whisk the curd and milk together until smooth.
- Add the cooled rice to the bowl and mix well with the curd mixture.
- Add the grated carrot, cucumber, and chopped coriander leaves to the bowl and mix well.
- In a frying pan, heat the oil over medium heat.
- Add the mustard seeds and let them splutter.
- Add the cumin seeds, urad dal, and chana dal to the pan and fry until golden brown.
- Add the chopped green chillies to the pan and fry for a few seconds.
- Add the fried mixture to the bowl with the rice and curd mixture.
- Add salt to taste and mix well.
- Refrigerate the curd rice for at least an hour before serving.
Notes
- You can adjust the amount of milk depending on how thick or thin you want the curd rice to be.
- You can add more or less of the grated vegetables depending on your preference.
- If you don't have urad dal or chana dal, you can skip them or use other lentils instead.
- You can also add some pomegranate seeds or grapes to the curd rice for some added sweetness.
