Ingredients

  • 1 cup cooked rice
  • 1 cup plain yogurt
  • 1/4 cup milk
  • 1/4 tsp salt

  • 1/4 tsp coriander powder
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • 2-3 dried red chillies
  • 1 tbsp chopped ginger
  • 1 tbsp chopped curry leaves
  • 2 tbsp chopped coriander leaves

Method

  1. Mix the cooked rice, yogurt, milk, salt, turmeric powder, cumin powder, and coriander powder in a bowl.
  2. Heat oil in a non-stick pan and add mustard seeds.
  3. When the mustard seeds start spluttering, add dried red chillies, chopped ginger, and curry leaves.
  4. Saute for a minute and then add the rice mixture to the pan.
  5. Stir well and cook for 2-3 minutes on low heat.
  6. Garnish with chopped coriander leaves and serve hot or cold.

Notes

  • You can add grated carrots, cucumber or pomegranate seeds to the curd rice for an extra crunch.
  • If the curd rice is too thick, you can add a little more milk to get the desired consistency.
  • Make sure to use fresh yogurt for this recipe.
