- 2 cups basmati rice
- 1 onion, sliced

- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 cups water
- 2 tablespoons oil or ghee
- Salt to taste
- A handful of cashews or raisins (optional)

Method
- Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 20 minutes.
- Meanwhile, heat the oil or ghee in a pan. Add the cumin seeds and sauté until they splutter.
- Add the sliced onions and sauté until they turn golden brown.
- Add the minced garlic and grated ginger. Sauté for a minute.
- Add the mixed vegetables and sauté for 5 minutes.
- Add the coriander powder, garam masala, turmeric powder, and red chili powder. Sauté for a minute.
- Drain the soaked rice and add it to the rice cooker.
- Add the sautéed vegetables, salt to taste, and 2 cups of water to the rice cooker. Stir well.
- Cover the rice cooker with a lid and turn it on. Let the rice cooker do its job.
- Once the rice cooker switches off, let it rest for 10 minutes.
- Fluff the rice with a fork. Garnish with cashews or raisins, if desired.
