  • 1 tsp red chilli powder
  • 2 tbsp oil
  • Salt to taste
  • 2 cups water

Method

  1. First, soak the rice in water for 20 minutes and drain the water.
  2. Next, soak the soya chunks in hot water for 10 minutes and then strain the water.
  3. Heat oil in a pressure cooker or a deep-bottomed pan and add cumin seeds, bay leaf, cloves, cardamom pods, and cinnamon stick. Fry for a few seconds.
  4. Add sliced onion and fry until golden brown.
  5. Add ginger-garlic paste and fry for a minute.
  6. Add chopped tomato and fry until soft and mushy.
  7. Add chopped carrot and capsicum and fry for 2-3 minutes.
  8. Add garam masala, red chilli powder, and salt and mix well.
  9. Add soaked soya chunks and fry for 2-3 minutes.
  10. Add soaked rice and fry for a minute.
  11. Add water and mix well.
  12. Cover the pressure cooker or the pan with a lid and cook on low flame for 10-12 minutes or until the rice is cooked.
  13. Once the rice is cooked, switch off the flame and let it rest for 5 minutes.
  14. Fluff up the rice with a fork and garnish with coriander leaves.
  15. Serve hot with raita or any side dish of your choice.

Notes

  • You can add other vegetables of your choice like peas, beans, or cauliflower.
  • If you do not have soya chunks, you can use soya granules or even tofu.
  • You can adjust the spice level according to your taste.
  • If you are using a deep-bottomed pan instead of a pressure cooker, you may need to add more water and cook for a longer time.
