Ingredients

  • 4 large bell peppers (any color)
  • 1 lb. ground sausage
  • 1 cup cooked white rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup shredded mozzarella cheese

Equipment

  • Large skillet
  • Sharp knife
  • Cutting board
  • Measuring cups and spoons

Method

  1. Preheat oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground sausage over medium heat until browned and no longer pink, stirring occasionally.
  4. Add the diced onion and garlic to the skillet and cook for 2-3 minutes until softened.
  5. Add the cooked rice, diced tomatoes, oregano, basil, paprika, salt and black pepper to the skillet and stir to combine.
  6. Spoon the sausage and rice mixture into the bell peppers, filling each one to the top.
  7. Place the stuffed bell peppers in a baking dish and cover with foil.
  8. Bake for 35-40 minutes, then remove the foil and sprinkle the shredded mozzarella cheese on top of each pepper.
  9. Return the baking dish to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes before serving.

Notes

You can use any color bell peppers for this recipe, but we recommend using a variety for a more colorful presentation. You can also use brown rice instead of white rice for a healthier option.
