- 1 teaspoon garam masala powder
- 2 bay leaves
- 2 cinnamon sticks
- 4 cloves
- 4 cardamom pods
- 1 teaspoon cumin seeds
- 2 tablespoons oil
- Salt to taste
- Coriander leaves for garnishing

Method
- Wash the rice under running water and soak it for 30 minutes.
- Heat oil in a large pot and add the bay leaves, cinnamon sticks, cloves, cardamom pods, and cumin seeds. Fry for a few seconds until fragrant.
- Add the sliced onions and fry until golden brown.
- Add the ginger-garlic paste and fry for a minute.
- Add the mixed vegetables and fry for 5 minutes.
- Add the red chili powder, coriander powder, garam masala powder, and salt. Mix well.
- Add the soaked rice and mix well.
- Add 3 cups of water and mix well. Cover with a lid and cook on a low flame for 20 minutes or until the rice is cooked.
- Switch off the flame and let the biryani rest for 10 minutes.
- Garnish with coriander leaves and serve hot with raita or salad.

- You can add more or less vegetables as per your choice.
- You can also add paneer or tofu to make it more nutritious.
