Ingredients

  • 3 tablespoons of XO sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste

Equipment

  • Wok or a large skillet
  • Large pot for boiling the noodles
  • Colander to drain the noodles
  • Bowl for mixing the sauces
  • Cutting board and knife for slicing the meat and vegetables

Method

  1. Bring a large pot of water to a boil. Add the rice noodles and cook for 2-3 minutes until they are tender but still firm. Drain the noodles in a colander and rinse them under cold water. Set aside.
  2. In a bowl, mix the XO sauce, soy sauce, and oyster sauce. Set aside.
  3. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the sliced pork belly and stir-fry for 2-3 minutes until they are browned and crispy. Add the shrimp and stir-fry for another 2-3 minutes until they are pink and cooked through.
  4. Add the bean sprouts and scallions and stir-fry for another 1-2 minutes until they are slightly wilted.
  5. Add the rice noodles and the sauce mixture to the wok or skillet. Toss everything together until the noodles are coated in the sauce and everything is heated through.
  6. Season the dish with salt and pepper to taste.
  7. Serve the XO rice noodles hot and garnish with some chopped scallions.

Notes

XO sauce can be found in most Asian grocery stores or online. If you can't find it, you can substitute it with chili garlic sauce or any other spicy sauce you like. You can also add other ingredients to this dish such as mushrooms, bok choy, or sliced beef.
