- 1 cup Basmati Rice

- 1 tablespoon Oil
- 1 Onion, sliced

- 1 teaspoon Ginger Garlic Paste
- 1 teaspoon Cumin Seeds
- 1 teaspoon Coriander Powder
- 1 teaspoon Garam Masala Powder
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- Salt, to taste
- 2 tablespoons Fresh Coriander Leaves, chopped
- 2 tablespoons Fresh Mint Leaves, chopped

Method
- Wash the basmati rice thoroughly and soak it in water for 30 minutes.
- In a large pot, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt. Cover the pot and cook the rice on low heat for 15-20 minutes or until the rice is cooked through.
- While the rice is cooking, heat oil in a frying pan. Add cumin seeds and let them splutter.
- Add sliced onions and fry until they turn golden brown.
- Add ginger-garlic paste and fry for a minute.
- Add mixed vegetables and fry for 5 minutes.
- Add coriander powder, garam masala powder, turmeric powder, red chili powder, and salt. Mix well and fry for 2 minutes.
- Add chopped coriander leaves and mint leaves. Mix well.
- When the rice is cooked, fluff it with a fork and add it to the pan with the vegetables. Mix well.
- Cover the pan and let the biryani cook on low heat for 5-10 minutes.
- Turn off the heat and let the biryani rest for a few minutes before serving.
Notes
- You can add more or fewer vegetables depending on your preference.
- You can also add paneer or tofu for added protein.
- You can adjust the spice level by adding more or less red chili powder.
- Make sure to soak the rice for at least 30 minutes before cooking to ensure even cooking.
