  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 2 bay leaves
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 tsp of smoked paprika
  • 1 tsp of dried thyme
  • 1/2 tsp of cayenne pepper

  • 3 cups of cooked white rice

Equipment

  • A large pot
  • A wooden spoon
  • A knife
  • A cutting board
  • A colander

Method

1. Rinse the dried red beans with cold water and soak them overnight in water. 2. The next day, drain the water from the beans and rinse them again. 3. In a large pot, heat some oil and add the chopped onion, green bell pepper, and celery. Cook until the vegetables are soft. 4. Add the minced garlic and cook for another minute. 5. Add the smoked sausage and cook until it's browned. 6. Add the soaked red beans, bay leaves, salt, black pepper, smoked paprika, dried thyme, cayenne pepper, and water to the pot. Mix well. 7. Bring the mixture to a boil, then reduce the heat and let it simmer for around 1 hour and 30 minutes, or until the beans are soft and tender. 8. Serve the red beans and sausage over a bed of cooked white rice.

Notes

To save time, you can use canned red beans instead of dried ones. Just drain and rinse them before using them. You can also use Andouille sausage instead of smoked sausage for a spicier flavor.
