For the ghee rice:- 2 cups of basmati rice
- 4 tablespoons of ghee
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1 bay leaf
- 1 teaspoon of salt
- 3 cups of water
- 1 pound of chicken breast, cut into bite-sized pieces
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of chili powder
- 1 teaspoon of salt
- 2 tablespoons of ghee
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/2 cup of tomato puree
- 1/4 cup of chopped cilantro
Equipment
- A large pot with a tight-fitting lid
- A large skillet
Method
For the ghee rice:
- Wash the rice in cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the ghee over medium-high heat. Add the cinnamon stick, cardamom pods, cloves, and bay leaf. Saute for 1-2 minutes until fragrant.
- Add the rice and salt to the pot and stir well. Saute for 2-3 minutes until the rice is lightly toasted.
- Add the water to the pot and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 18-20 minutes until the rice is cooked through and the water has been absorbed.
- Remove the pot from the heat and set aside.
For the chicken:
- In a bowl, combine the cumin powder, coriander powder, turmeric powder, chili powder, and salt. Add the chicken and toss to coat.
- In a large skillet, heat the ghee over medium-high heat. Add the onion and saute for 2-3 minutes until softened.
- Add the garlic to the skillet and saute for an additional 1-2 minutes.
- Add the chicken to the skillet and cook for 5-7 minutes until browned on all sides.
- Add the tomato puree to the skillet and stir well. Reduce the heat to low, cover the skillet, and simmer for 10-15 minutes until the chicken is cooked through.
- Remove the skillet from the heat and stir in the chopped cilantro.
