  • 1 teaspoon urad dal

  • 2-3 tablespoons lemon juice
  • Salt to taste

Method

  1. Wash the rice under running water until the water runs clear.
  2. Soak the rice in water for 30 minutes.
  3. Drain the rice and set it aside.
  4. Heat oil in the pan over medium heat.
  5. Add mustard seeds, cumin seeds, urad dal, and chana dal to the pan and let them splutter.
  6. Add green chilies, turmeric powder, and asafoetida powder to the pan and sauté for a few seconds.
  7. Add the rice to the pan and sauté for a minute.
  8. Add 2 cups of water to the pan and bring it to a boil.
  9. Reduce the heat to low, cover the pan with a lid, and let it simmer for 15-20 minutes or until the rice is cooked.
  10. Once the rice is cooked, turn off the heat and add lemon juice, roasted peanuts, grated coconut, and salt to the pan.
  11. Mix well and garnish with chopped cilantro.
  12. Your Lemon Rice is ready to serve.
