Method

1. Boil the eggs in a pot for 10 minutes. Once done, remove the shells and keep them aside. 2. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter. 3. Add chopped onions, green chillies, ginger, and garlic to the pan. Stir and cook until the onions turn golden brown. 4. Add chopped tomatoes and cook until they turn soft and mushy. 5. Add turmeric powder, chilli powder, coriander powder, cumin powder, and garam masala to the pan. Mix well. 6. Add 1 cup of water to the pan and let the mixture come to a boil. 7. Add the boiled eggs to the pan and mix well. 8. Cover the pan and let it simmer for 10-15 minutes. 9. Garnish with coriander leaves before serving.
