- 1 cup Rice
- 2 cups Water

- 1/2 teaspoon Chana dal
- 1 tablespoon Oil
- A few Curry leaves
- A pinch of Asafoetida

Method
- Wash the rice and soak it in water for 15 minutes.
- Drain the water and add the rice to a pressure cooker with two cups of water.
- Cook the rice until it is soft and fluffy. Once cooked, let it cool down for a few minutes.
- Add the curd and salt to the cooked rice and mix well.
- Heat oil in a frying pan and add mustard seeds, cumin seeds, urad dal, chana dal, curry leaves, and asafoetida. Fry until the mustard seeds pop.
- Pour the fried ingredients over the curd rice and mix well.
- Cover the bowl with a lid and let it rest for 6-8 hours or overnight to ferment.
- Once fermented, mix the rice well and serve chilled.

- You can add chopped cucumber, carrots, or pomegranate seeds for added flavor and nutrition.
