Ingredients

Method

1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 20 minutes. 2. Heat the oil in a large pot over medium heat. Add the mustard seeds and cumin seeds and let them splutter. 3. Add the chopped onions, garlic, ginger, and green chilies. Sauté for 2-3 minutes or until the onions are translucent. 4. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Mix well and cook for 5-6 minutes or until the tomatoes are soft and mushy. 5. Drain the water from the soaked rice and add it to the pot. Mix well and cook for 2-3 minutes. 6. Add 2 cups of water and bring the mixture to a boil. Cover the pot with a tight-fitting lid and reduce the heat to low. Cook for 15-20 minutes or until the rice is cooked and the water has been absorbed. 7. Turn off the heat and let the rice sit covered for 5-10 minutes. 8. Fluff the rice with a fork and garnish with chopped cilantro leaves.
