- 1 cup brown rice
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced

- 1 tomato, chopped
- 1 cup mixed vegetables (carrots, peas, beans, and corn)
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- Coriander leaves for garnish
Equipment
- A medium-sized pot with a lid
- A frying pan
- A wooden spoon or spatula
- A cutting board and knife
Method
- Wash the brown rice and soak it in water for 30 minutes.
- Heat oil in a pot and add mustard seeds and cumin seeds.
- Once the seeds start to splutter, add chopped onions and sauté until translucent.
- Add minced garlic and grated ginger and sauté for another minute.
- Add chopped tomatoes and cook until they turn mushy.
- Add mixed vegetables and cook for 5 minutes.
- Add turmeric powder, red chili powder, and salt.
- Drain the water from the soaked brown rice and add it to the pot.
- Add 2 cups of water and mix well.
- Cover the pot with a lid and cook on low flame for 25-30 minutes, or until the rice is cooked.
- Garnish with coriander leaves and serve hot.
