- 2 tablespoons soy sauce
- 1 tablespoon chili garlic sauce
- 2 tablespoons vegetable oil
- 1 egg, beaten

Method
- In a bowl, marinate the chicken with soy sauce, chili garlic sauce, salt, and pepper. Set aside for at least 15 minutes.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the beaten egg and scramble it until it's cooked through. Set it aside on a plate.
- In the same wok, add the marinated chicken and cook until it's browned and cooked through. Remove the chicken and set it aside on the same plate as the egg.
- Add a little more oil to the wok if needed and sauté the onions, bell pepper, garlic, and ginger until the onions are translucent and the vegetables are tender.
- Add the frozen peas and carrots and cook for another 3-4 minutes.
- Add the cooked rice and stir-fry for a few minutes until it's heated through.
- Add the cooked chicken and egg back into the wok and stir-fry everything together for a few more minutes.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve hot.
