- 1 whole chicken (about 1.5 kg)
- 3 cups of rice
- 6 cups of chicken stock

- 1 tablespoon of soy sauce
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 3 tablespoons of vegetable oil
- 2 cucumbers, sliced
- 1 red chili, sliced
- 1 green chili, sliced
- 4 cloves of garlic, chopped
- 1 tablespoon of lime juice
- 1 tablespoon of sugar
- 1 teaspoon of salt

Method
Step 1: Prepare the chicken Wash the chicken thoroughly and pat dry. Rub the chicken with sesame oil, soy sauce, salt, and sugar. Stuff the chicken cavity with sliced ginger and pandan leaves. Place the chicken in a large pot and pour in enough water to cover the chicken. Bring it to a boil, then reduce the heat to low and simmer for 30 minutes. Turn off the heat and let the chicken sit in the pot for another 30 minutes. Remove the chicken from the pot and let it cool. Step 2: Prepare the rice Wash the rice and drain it. Heat the vegetable oil in a wok or frying pan over medium heat. Add the minced garlic and sliced ginger and stir-fry until fragrant. Add the rice and stir-fry for 2-3 minutes until the rice is coated with the oil and fragrant. Transfer the rice to a rice cooker and add the chicken stock. Add the knotted pandan leaves and cook the rice according to the rice cooker's instructions. Step 3: Prepare the chili sauce In a bowl, mix the chopped garlic, sliced red chili, sliced green chili, lime juice, sugar, and salt. Mix well and set aside. Step 4: Serve the dish Cut the chicken into pieces and arrange them on a plate. Serve with the fragrant rice, cucumber slices, and chili sauce. You can also serve a clear broth on the side.Notes
