- 1 cup of rice
- 3 cups of water
- 1 cup of curd (yogurt)
- 1 tablespoon of oil

- 1 sprig of curry leaves
- 1 green chilli, chopped
- 1/4 teaspoon of asafoetida
- Salt to taste

Method
- Wash the rice thoroughly and soak it in water for 30 minutes.
- Drain the water and add the rice to a saucepan along with 3 cups of water. Bring it to a boil and then reduce the flame to low. Cover the pan and let it cook for 15-20 minutes or until the rice is cooked.
- Once the rice is cooked, remove it from the heat and let it cool down.
- In a pan, heat the oil over medium heat. Add the mustard seeds, urad dal, chana dal, curry leaves, and green chilli. Fry for a minute or until the mustard seeds start to pop.
- Add the asafoetida and fry for a few seconds.
- Add the cooked rice to the pan and mix well.
- Add the curd and salt to taste. Mix everything well.
- If the rice is too dry, you can add a little milk to make it moist.
- Your curd rice is ready to be served. You can garnish it with some chopped coriander leaves.
Notes
- You can use leftover rice for this recipe.
- If you don't have asafoetida, you can skip it.
- If you want your curd rice to be more tangy, you can add some lemon juice.
