For the batter:- 1 cup split yellow lentils (moong dal)
- 1 cup rice
- 1/4 cup yogurt
- 1/4 cup water
- 1 tsp sugar

- 1 tsp green chili paste
- 1/2 tsp turmeric powder
- 1 tsp baking soda
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 2-3 green chilies, chopped
- 1/4 cup grated coconut
- 1/4 cup chopped cilantro
- 1/4 cup water
- 1 tsp sugar
- 1 tsp salt

- A blender or food processor
- A steamer or pressure cooker
Method
- Wash and soak the rice and lentils separately for about 4 hours.
- Drain the water and grind the rice and lentils together into a smooth batter. Add water if needed.
- Add yogurt, ginger paste, green chili paste, turmeric, sugar, and salt to the batter and mix well. Let it rest for 30 minutes.
- Grease a steamer plate with oil and set it aside.
- Add baking soda to the batter and mix well. Pour the batter into the greased plate and steam for 15-20 minutes.
- Once steamed, let it cool down for a few minutes before cutting it into pieces.
- For the tempering, heat oil in a pan and add mustard seeds and sesame seeds.
- Add green chilies and grated coconut and sauté for a minute.
- Add water, sugar, and salt and mix well. Cook for a minute.
- Pour this tempering over the steamed dhokla and garnish with chopped cilantro.
- Serve hot or cold with chutney or ketchup.
Notes
- You can add some grated carrots or beetroot to the batter for extra nutrition and color.
- You can use a pressure cooker instead of a steamer to cook the dhokla.
- Make sure the batter is not too thick or too thin. It should be of pouring consistency.
