Description

This recipe is perfect for busy weeknights when you want something easy and delicious for dinner. It's a cheesy, comforting combination of chicken and rice that cooks up in your slow cooker, leaving you plenty of time to relax or get other things done.

Prep Time

10 minutes

Cook Time

4-5 hours on high or 6-8 hours on low

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can condensed cream of chicken soup
  • 1 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Equipment

  • Slow cooker
  • Cooking spray
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method

1. Spray the inside of your slow cooker with cooking spray. 2. Add the uncooked rice to the bottom of the slow cooker. 3. Lay the chicken breasts on top of the rice. 4. In a separate bowl, whisk together the cream of chicken soup, water, garlic powder, salt, and pepper. 5. Pour the soup mixture over the chicken and rice in the slow cooker. 6. Cover the slow cooker and cook on high for 4-5 hours or on low for 6-8 hours, until the chicken is cooked through and the rice is tender. 7. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the chicken and rice. Cover the slow cooker and let the cheese melt. 8. Serve hot and enjoy!

Notes

If you prefer, you can use boneless, skinless chicken thighs instead of chicken breasts. You can also swap out the cheddar cheese for another type of cheese that melts well, like mozzarella or Colby Jack.

Recipe Tips

For a little extra flavor, you can add some chopped onion or minced garlic to the slow cooker along with the rice and chicken. You can also stir in some frozen peas or mixed vegetables during the last 30 minutes of cooking for a complete one-pot meal. If you're short on time in the morning, you can prep this recipe the night before and keep the slow cooker insert in the fridge. In the morning, just pop it into the slow cooker and turn it on - easy peasy! Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove with a splash of water or chicken broth to keep it moist.
