- 2 cups of rice
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 can of tomato paste
- 2 cans of diced tomatoes
- 1 tsp of smoked paprika
- 1 tsp of curry powder
- 1 tsp of dried thyme
- 1 tsp of salt
- 1 tsp of black pepper
- 3 cups of chicken stock
- 2 tbsp of vegetable oil

- A large pot with a lid
- A wooden spoon
- A measuring cup
- A measuring spoon
- A knife
- A cutting board
Method
- Rinse the rice with cold water and set aside.
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
- Add the tomato paste, diced tomatoes, smoked paprika, curry powder, dried thyme, salt and black pepper to the pot and stir well.
- Add the chicken stock to the pot and stir well.
- Add the rice to the pot and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for approximately 35-40 minutes or until the liquid has been absorbed and the rice is fully cooked.
- Remove the pot from the heat and let the rice rest for 5-10 minutes.
- Fluff the rice with a fork and serve.
