Ingredients

  • 10 rice paper wrappers

  • 10 fresh mint leaves
  • 10 fresh cilantro leaves
  • 10 fresh basil leaves
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 1 tablespoon honey
  • 1 tablespoon freshly squeezed lime juice
  • 1 garlic clove, minced

Equipment

  • Cutting board
  • Sharp knife
  • Bowl of warm water
  • Large plate or tray
  • Dipping sauce bowl

Method

  1. Prepare all of the vegetables and herbs by washing and julienning them.
  2. Fill a large bowl or tray with warm water.
  3. Dip one rice paper wrapper into the water for a few seconds until it softens.
  4. Place the wrapper onto a plate or tray.
  5. Place a few of each vegetable and herb onto the bottom half of the wrapper.
  6. Top with one shrimp.
  7. Roll the wrapper tightly around the filling, tucking in the sides as you go.
  8. Repeat with the remaining wrappers and filling.
  9. To make the dipping sauce, whisk together hoisin sauce, peanut butter, soy sauce, water, honey, lime juice, and minced garlic.
  10. Serve the rice paper rolls with the dipping sauce.

Notes

Rice paper wrappers can be found in the Asian section of most grocery stores. If you cannot find them, you can substitute with lettuce leaves or tortilla wraps. Feel free to add or substitute any vegetables or proteins to the filling. Some popular options include sliced avocado, shredded chicken, or tofu.
