Ingredient

  • 1 lb. ground beef

  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 1 tbsp. paprika
  • 10-12 flour tortillas
  • Salt and pepper to taste

  • Large mixing bowl
  • 9 x 13 inch baking dish
  • Aluminum foil

Method

  1. Preheat your oven to 375°F.
  2. In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat.
  3. Add the cooked rice, diced tomatoes, enchilada sauce, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper to the skillet. Mix well and cook for 5-10 minutes, until heated through.
  4. Take a tortilla and place a scoop of the beef and rice mixture down the center. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas and mixture.

  7. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and the enchiladas are heated through.
