- 3 cups of water
- 2 tbsp of oil
- 1 bay leaf

- 2 green chili, slit
- 1 tsp ginger garlic paste
- 1 tomato, chopped
- 1/2 cup of mixed vegetables (carrots, beans, peas)
- 1 tsp of chili powder
- 1 tsp of turmeric powder
- 1/2 tsp of cumin powder
- 1 tsp of coriander powder
- Salt to taste
- A handful of mint leaves
- A handful of coriander leaves
- 1 lemon, juiced

Method
Follow the below steps to make Brinji rice.- Wash the Basmati rice and soak it for 20-30 minutes.
- Heat oil in a large pot and add bay leaf, cinnamon stick, cloves and cardamom pods.
- Add sliced onions, green chili, ginger garlic paste and sauté until onions turn translucent.
- Add chopped tomatoes and mixed vegetables, sauté for 2-3 minutes.
- Add chili powder, turmeric powder, cumin powder, coriander powder and salt. Mix well.
- Add soaked rice and mix well.
- Add water and bring the mixture to boil.
- Reduce the flame to low and cover the pot with a lid. Let it cook for 20-25 minutes.
- Once the rice is cooked, add mint leaves and coriander leaves. Mix well.
- Add lemon juice and mix well.
- Brinji rice is ready to serve.
Notes
- You can add more or less water depending on the type of rice you are using.
- Ensure that the rice is cooked properly before adding the mint and coriander leaves.
- You can also add cashews and raisins to enhance the flavor of the dish.
