Ingredients

- 2 cups cooked rice - 1/2 cup chopped carrots - 1/2 cup chopped beans - 1/2 cup chopped cabbage - 1/2 cup chopped onions - 1/2 cup chopped capsicum - 2 cloves of garlic - 2 eggs - 2 tbsp of oil - Salt to taste - 1 tsp of black pepper powder - 1 tsp of soy sauce - 1 tsp of vinegar

Equipment

- A wok or large frying pan - A spatula - A chopping board - A knife

Method

1. Heat oil in a wok or large frying pan over medium heat. 2. Add garlic and fry for a few seconds until fragrant. 3. Add onions and sauté until they turn translucent. 4. Add chopped vegetables (carrots, beans, cabbage, and capsicum) and fry for a few minutes until they are cooked but still crispy. 5. Push the vegetables to one side of the wok and crack the eggs onto the other side. 6. Scramble the eggs until they are cooked. 7. Mix the vegetables and eggs together. 8. Add cooked rice to the wok and mix well. 9. Add salt, black pepper powder, soy sauce, and vinegar to the rice and mix well. 10. Fry the rice for a few minutes until it's heated through and well combined with the vegetables and eggs. 11. Serve hot with a garnish of chopped coriander leaves.

Notes

- Use cold leftover rice for best results. - You can add any vegetables of your choice such as peas, corn, and mushrooms. - Adjust the amount of soy sauce and vinegar to your taste.
