Method
- Heat 1 tablespoon of vegetable oil in a wok or large frying pan over medium-high heat.

- Add the cooked rice to the wok or frying pan and stir-fry for 2-3 minutes until the rice is heated through.
- Add 1 tablespoon of soy sauce, salt, and black pepper to the rice and stir to combine.
- Remove the rice from the wok or frying pan and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the wok or frying pan over high heat.
- Add the rice back to the wok or frying pan and stir-fry for another 2-3 minutes until the rice is crispy and golden brown.
- Add the remaining 1 tablespoon of soy sauce and green onion (if using) and stir to combine.
- Serve hot and enjoy!
Notes
- Use day-old rice for the best results. Freshly cooked rice can be too moist and won't crisp up as well.
