- 1 cup uncooked wild rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh chives

Method
- Preheat oven to 350°F.
- In a large skillet, cook the sausage over medium heat until browned and cooked through, about 10 minutes. Drain any excess fat and transfer the sausage to a large bowl.
- In the same skillet, cook the onion, garlic, and bell peppers over medium heat until softened, about 5 minutes.
- Add the cooked vegetables to the bowl with the sausage.
- Add the uncooked wild rice, dried thyme, dried sage, salt, and black pepper to the bowl and stir to combine.
- Pour the chicken broth into the bowl and stir to combine.
- Transfer the mixture to a 2-quart casserole dish and cover with foil.
- Bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the rice is tender and the casserole is heated through.
- Sprinkle the chopped parsley and chives over the casserole and serve.
Notes
