Cook Time

The cook time for this recipe is approximately 25 minutes.

Ingredients

  • 1 cup of long-grain white rice
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 can of diced tomatoes, drained
  • 1 ½ cups of chicken broth
  • 1 teaspoon of salt
  • 1 tablespoon of fresh cilantro, chopped

Equipment

  • Large skillet with a lid
  • Measuring cups and spoons
  • Knife and cutting board
  • Spoon or spatula

Method

  1. Start by rinsing the rice in a fine-mesh strainer under cold running water. Drain well and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for about 2 minutes, or until softened. Add the garlic, cumin, and chili powder and sauté for another minute.
  3. Add the rice to the skillet and stir well to combine with the onion and spices. Cook for about 2 minutes, or until the rice is lightly toasted.
  4. Add the drained diced tomatoes, chicken broth, and salt to the skillet. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the skillet with a lid, and simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Remove the skillet from the heat and let it sit, covered, for about 5 minutes to allow the rice to steam and absorb any remaining liquid.
  7. Fluff the rice with a fork and sprinkle with fresh cilantro before serving.

Recipe Tips

To prevent the rice from sticking to the bottom of the skillet, make sure to stir it frequently during the cooking process. Also, do not remove the lid from the skillet while the rice is cooking, as this will release the steam and prevent the rice from cooking properly. If you want to add some protein to the rice, you can stir in some cooked and shredded chicken or beef before serving. This Tex Mex rice also makes a great filling for burritos or tacos. Enjoy!
