- 1 ½ cups of chicken broth
- 1 teaspoon of salt
- 1 tablespoon of fresh cilantro, chopped

Method
- Start by rinsing the rice in a fine-mesh strainer under cold running water. Drain well and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for about 2 minutes, or until softened. Add the garlic, cumin, and chili powder and sauté for another minute.
- Add the rice to the skillet and stir well to combine with the onion and spices. Cook for about 2 minutes, or until the rice is lightly toasted.
- Add the drained diced tomatoes, chicken broth, and salt to the skillet. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the skillet with a lid, and simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove the skillet from the heat and let it sit, covered, for about 5 minutes to allow the rice to steam and absorb any remaining liquid.
- Fluff the rice with a fork and sprinkle with fresh cilantro before serving.
Notes
This recipe can easily be doubled or tripled to serve a larger crowd. You can also customize the spices to your liking.
