- 2 cups Basmati rice
- 2 tbsp ghee or oil

- 4 green cardamom pods
- 4 cups water
- 2 tsp salt

- 1 tsp coriander seeds
- 1 bay leaf
- 1 onion, finely chopped
- 1-2 green chilies, chopped
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 lb chicken, cut into small pieces
- 1/2 cup plain yogurt
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- 1/4 cup cilantro leaves, chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup fried onions
- 1/4 cup raisins
- 1/4 cup cashew nuts

- Small pan
- Food processor or blender

Method
- Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain and set aside.
- In a large pot, heat the ghee or oil over medium heat. Add cinnamon, cardamom, bay leaf, coriander seeds, and cumin seeds. Fry for 1-2 minutes until fragrant.
- Add the onions and green chilies and fry until the onions are golden brown.
- Add the ginger and garlic paste and fry for 2-3 minutes until fragrant.
- Add the chicken and fry for 5-7 minutes until the chicken is browned.
- Add the yogurt, turmeric powder, red chili powder, and garam masala powder. Mix well and cook for 5-7 minutes until the chicken is cooked through.
- Add the cilantro and mint leaves and mix well.
- Add the rice and mix well. Add water and salt and bring to a boil.
- Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- In a small pan, fry the raisins, cashew nuts, and fried onions until golden brown.
- Fluff the rice with a fork and transfer it to a serving dish. Garnish with the fried raisins, cashew nuts, and fried onions.
- Serve hot with raita, salad, or chutney.
Notes
- You can use any meat of your choice for this recipe.
- If you don't have all the spices, you can use biryani masala instead.
- You can also add vegetables like carrots, peas, and potatoes to make a vegetarian version of this recipe.
