- 1 cup long-grain white rice, rinsed and drained
- 1 1/2 cups chicken broth
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley

Method
- Press the sauté button on your Instant Pot and add the olive oil.
- Once the oil is hot, add the chopped onion and cook for 2-3 minutes, until it starts to soften. Add the garlic and cook for another 30 seconds.
- Add the ground cumin, smoked paprika, salt, and black pepper to the Instant Pot and stir to combine with the onion and garlic.
- Add the chicken breasts to the Instant Pot and spoon some of the spice mixture over them.
- Add the rinsed and drained rice to the Instant Pot and stir it around so it's coated with the spice mixture.
- Pour the chicken broth over the rice and chicken. Don't stir.
- Close the Instant Pot lid and make sure the valve is set to sealing.
- Press the manual button and set the cook time to 15 minutes.
- Once the cook time is up, let the pressure release naturally for 10 minutes before opening the lid.
- Add the frozen peas to the Instant Pot and stir them in. The heat from the rice and chicken will defrost them.
- Serve the chicken and rice topped with chopped fresh parsley.
