In this recipe, we will be making two types of fried rice, vegetable fried rice, and chicken fried rice.

Ingredients

For Vegetable Fried Rice:
  • 2 cups cooked rice
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 1/2 cup corn kernels
  • 2 eggs, lightly beaten
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
For Chicken Fried Rice:
  • 2 cups cooked rice
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 chicken breast, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, lightly beaten
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil

Equipment

  • Wok or a large skillet
  • Spatula
  • Bowl
  • Cutting board
  • Knife

Method

For Vegetable Fried Rice:
  1. Heat the wok or a large skillet over high heat and add vegetable oil.
  2. Add chopped onions and garlic, and sauté for a minute.
  3. Add diced carrots, frozen peas, and corn kernels, and stir-fry for 2-3 minutes.
  4. Push the vegetables to the side of the wok, and add the lightly beaten eggs. Scramble the eggs until they are cooked.
  5. Add the cooked rice to the wok, and stir-fry for 2-3 minutes.
  6. Add soy sauce and sesame oil, and stir-fry for another minute.
  7. Serve hot.
For Chicken Fried Rice:
  1. Heat the wok or a large skillet over high heat and add vegetable oil.
  2. Add chopped onions and garlic, and sauté for a minute.
  3. Add diced chicken breast and stir-fry for 5-6 minutes, until the chicken is cooked.
  4. Add diced carrots, frozen peas, and stir-fry for 2-3 minutes.
  5. Push the vegetables to the side of the wok, and add the lightly beaten eggs. Scramble the eggs until they are cooked.
  6. Add the cooked rice to the wok, and stir-fry for 2-3 minutes.
  7. Add soy sauce and sesame oil, and stir-fry for another minute.
  8. Serve hot.

Notes

  • You can add any vegetables of your choice in the fried rice.
  • Make sure the rice is cold before adding it to the wok, as it will prevent it from getting sticky.
  • Adding sesame oil at the end will give a nice flavor to the dish.
  • You can also add some chili flakes or hot sauce if you like your fried rice spicy.
