  • 1 sprig curry leaves
  • 2 tbsp oil

Method

  1. Heat oil in a small pan and add mustard seeds. When they start to splutter, add cumin seeds, urad dal, and curry leaves. Fry for a few seconds until the dal turns golden brown.
  2. Add green chilies and grated ginger. Fry for a few more seconds until the ginger becomes fragrant.
  3. Add the seasoning to the cooked rice and mix well.
  4. Add curd and salt to the rice and mix well.
  5. Adjust seasoning as needed.
  6. Chill the curd rice in the refrigerator for at least 30 minutes before serving.

Notes

  • You can add more or less green chilies depending on your spice tolerance.
  • If you don't have urad dal, you can substitute it with chana dal (split Bengal gram).
  • You can add some chopped coriander leaves for a fresh flavor.
