- 1 1/4 cups water
- 1/2 cup coconut milk
- 1/4 cup sugar
- 1/4 tsp salt
- 1 ripe mango, peeled and sliced
- Sesame seeds, for garnish
Equipment
The equipment you will need for this recipe are:- Medium-sized pot with lid
- Large mixing bowl
- Small saucepan
- Steamer basket
Method
Follow these steps to make the Thailand Mango Sticky Rice:- Rinse the glutinous rice in cold water until the water runs clear.
- Place the rice and water in a medium-sized pot and bring to a boil over high heat.
- Once boiling, reduce the heat to low and cover the pot with a lid. Cook for 15-20 minutes, or until the rice is tender and the water has been absorbed.
- In a small saucepan, combine the coconut milk, sugar, and salt. Heat over low heat, stirring occasionally, until the sugar has dissolved.
- Once the rice is cooked, transfer it to a large mixing bowl and pour the coconut milk mixture over it. Stir to combine.
- Cover the bowl with a lid or plastic wrap and let it sit for 10-15 minutes to allow the rice to absorb the coconut milk mixture.
- To serve, place a scoop of the sticky rice on a plate and top it with sliced mango. Garnish with sesame seeds, if desired.
Notes
If you don't have a steamer basket, you can use a colander placed over a pot of boiling water instead. Just make sure the rice doesn't touch the water.Nutrition Info
