- 1 cup white rice

- 1 onion, diced

- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups chicken broth
- 1/2 cup frozen peas

Method
- Season the chicken with salt, pepper, and paprika.
- Turn on the Instant Pot and select the sauté function. Add olive oil and brown the chicken on both sides for 3-4 minutes. Remove from the pot and set aside.
- Add onion and garlic to the pot and cook until fragrant, about 2 minutes.
- Add rice, thyme, salt, and pepper, and stir to combine.
- Add chicken broth to the pot and stir to combine.
- Add the chicken back into the pot, skin side up.
- Close the Instant Pot lid and turn the valve to sealing.
- Select the manual pressure cook function and set the timer for 8 minutes.
- Once the timer goes off, let the pressure release naturally for 10 minutes, then do a quick release.
- Remove the chicken from the pot and set aside. Add frozen peas to the pot and stir to combine.
- Serve the rice and peas with the chicken on top.
