Description

Ingredients

  • 2 cups of rice
  • 4 cups of water
  • 1 cup of mixed vegetables (carrots, peas, corn, and beans)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp of ginger paste
  • 1 tsp of soy sauce
  • 1 tsp of vinegar
  • 1 tsp of black pepper
  • 2 tbsp of oil
  • Salt to taste

Equipment

  • A wok or a large frying pan
  • A spatula
  • A pot to cook rice
  • A colander to drain rice

Method

  1. Wash the rice and soak it in water for 30 minutes. Drain the water and add 4 cups of fresh water to the rice. Cook the rice until it is tender and then drain the water using a colander.
  2. Add oil to a wok or a large frying pan and heat it over high heat. Add chopped onions, minced garlic, and ginger paste to the wok and stir-fry for a minute or until the onions are translucent.
  3. Add the mixed vegetables to the wok and stir-fry for 2-3 minutes or until they are cooked but still crispy.
  4. Add soy sauce, vinegar, black pepper, and salt to the wok and mix well.
  5. Add the cooked rice to the wok and mix well with the vegetables and seasonings. Stir-fry for 2-3 minutes or until everything is well combined.
  6. Turn off the heat and serve hot.

Notes

  • You can add more or fewer vegetables according to your preference.
  • You can add meat, egg, or tofu to the dish to make it more filling.
  • You can also use leftover rice for this recipe.
