Description

Rice dumplings, also known as zongzi, are a traditional Chinese food typically eaten during the Dragon Boat Festival. These dumplings are made by wrapping glutinous rice with various fillings in bamboo leaves and steaming them. In this vegetarian version, we will be using mushrooms, peanuts, and other vegetables as the filling.

Ingredients

The following ingredients are needed for this recipe:
  • 2 cups glutinous rice
  • 20 bamboo leaves

  • 1/2 cup dried black beans
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon five-spice powder
  • 1 teaspoon white pepper

Equipment

The following equipment is needed for this recipe:
  • Large pot for soaking bamboo leaves
  • Strainer
  • Large wok or frying pan
  • Large steamer

Method

  1. Soak the bamboo leaves in hot water for 2 hours, then rinse and drain.
  2. Soak the glutinous rice in cold water for 2 hours, then rinse and drain.
  3. Heat the wok or frying pan over medium heat and add the oil.
  4. Add the shiitake mushrooms, peanuts, dried tofu, and dried black beans and stir-fry for 5 minutes.
  5. Add the soy sauce, sugar, salt, five-spice powder, and white pepper and stir-fry for an additional 5 minutes.
  6. Add the glutinous rice to the wok and stir-fry for 3 minutes.
  7. Take a bamboo leaf and fold it in half to form a cone shape.
  8. Add a spoonful of the rice mixture to the cone.
  9. Use the bamboo leaf to wrap the rice mixture tightly.
  10. Tie the dumpling with a string or a thin strip of bamboo leaf.
  11. Steam the dumplings for 1 hour and 30 minutes.
  12. Remove the dumplings from the steamer and let them cool for 10 minutes.
  13. Unwrap the dumplings and serve.

Notes

  • The filling can be adjusted to your preference. You can add or remove ingredients as you like.
  • Make sure to wrap the dumplings tightly to prevent them from falling apart during steaming.
  • Leftover dumplings can be refrigerated and reheated in the steamer.
